Bianca di Saluzzo
Bianca di Saluzzo is a traditional white chicken from Piedmont in northwestern Italy, especially the Saluzzo area of Cuneo province. The name means White of Saluzzo, and the breed is closely tied to local farm poultry rather than industrial broiler lines. Birds are medium to moderately large, with white plumage, yellow skin and shanks, a red single comb, and a plain utility shape suited to both table use and egg production. It is often mentioned alongside other Piedmontese breeds such as the Bionda Piemontese, but its white coloring and Saluzzo identity set it apart.
Small farms and conservation flocks keep Bianca di Saluzzo for regional heritage, flavor-oriented meat, and a steady but non-industrial supply of eggs. They do best in clean, well-ventilated housing with access to range or a generous run, where their white feathering can be kept cleaner than in muddy yards. As with many revived local breeds, buyers should look for stock from breeders who can explain selection goals and avoid crossing with generic white commercial chickens. Breeding priorities usually include yellow skin, correct white plumage, fertility, and the slower growth expected of a traditional dual-purpose bird.
